In light of recent news, I have a new obsession.
I am on a mission to eat vegetables every day at breakfast! I usually don’t have veggies in the morning, probably out of taste and convince – but waking up an extra 15 minutes early to cook some veg is more than worth it! I tend to go for oatmeal and fruit, which is fantastic, but I want to up my green food intake. I plan on having my normal oatmeal smoothies every morning too, because well, Yum! Plus, it’s time to stop losing weight and actually look forward to gaining!
This morning for breakfast, I sauteed some zucchini, spinach, and fresh green pepper (from my own garden) in a skillet with a touch of coconut oil.
Then I added one whole organic egg and 2 egg whites. Yep, I eat eggs. This is where the “mostly vegan” thing comes into play when I talk about my diet, but that’s a whole other post! Sorry to disappoint all you die hard vegan folk, but I love the yolk!
I totally believe that breakfast is the most important meal of the day. Here’s a tip: be conscious of your choices every morning. Think about getting a complex carbohydrate and some protein into your body to get your metabolism moving for the day. Don’t be afraid to eat more in the mornings and less at night, you need to fuel!
