Snack of the Day: Sweet Potato Sunshine

Today’s mid afternoon snack is an easy and nutritious way to satisfy a sweet tooth. Bonus points: the healthy fats will keep you full until dinner.

This is my Sweet Potato Sunshine:

Now this is easy….

Cook or just reheat a leftover microwave steamed sweet potato. Mash in a bowl with a dash of cinnamon. Mix in some shredded coconut. Top with a few almonds. Eat. Done. Yum!

What’s for Breakfast: Not Your Normal Oatmeal

This mornings breakfast may be typical in that it involves my go to combination of oatmeal, fruit and healthy fats, but that’s where the normalcy ends.

This is my Blueberry Coconut Oatmeal:

And it’s super easy to make! Cook 1/2 cup rolled oats cooked in water in the microwave for 2 minutes. Mix in a dash of cinnamon to taste, about 1/4 cup of unsweetened applesauce, a few tablespoons of ground flaxseed (optional), and a handful of nuts (I used walnuts). Then the fun part: add some fresh blueberries and a couple tablespoons of shredded coconut!

And yes, no sugar necessary. Promise. It’s sweet enough! Enjoy!

Everyone who has ever gotten fat and then lost weight is embraced as an expert, fully authorized by our culture to dispense advice and sell books advising others on how to succeed. For the most part, every one of these makes a case different from every other — and yet every one is convinced they have found the universal formula. And over and over again, the faithful, or hopeful, line up and reach for their credit cards.

Don’t get me wrong — I am delighted for very individual who figures out how to lose weight, and more importantly, find health. I am delighted each time someone finds a path they can follow to lasting vitality. But the notion that this automatically registers as expertise is exactly analogous to the car crash and kitchen fire examples above. In any area other than nutrition and weight control, we would either laugh or roll our eyes.

Everyone who has ever eaten seems to be granted an equally authoritative opinion about nutrition.

This is not just nonsense. It’s dangerous nonsense.

Amen!

Seriously do yourself a favor and seek expert nutrition advice.

Find a registered dietitian in your area by clicking here, or ask your physician for a referral. Seek true research evaluation and opinion from medical experts, not that chick on Facebook that’s gotten skinny and started a blog.

Oh Baby!

It’s officially official! Baby GIRL Blankenship is due in May!

I’m sorry I’ve been MIA from blogging land lately. Life’s been rough. School. Work. Life.

And a very angry fetus that really hates digestion and exercise.

A hospitalization for dehydration due to severe acid reflux certainly hasn’t helped my fitness motivation.

But I promise a full pregnancy nutrition and experience update one day soon.

Sunday Night Sgetty

Tonight for dinner, despite my all day morning sickness, is a big ole bowl of vegan sgetty. It seems like all I can tolerate lately is carbs, and I’m a-okay with that!

Bonus points – my husband will eat this too!

My go to can of sauce is the Publix Premium Marinara Sauce, a little pricey if you compare it to your basic stuff, but it’s worth it. This sauce is vegan and low in sugar. It’s even completely free of high fructose corn syrup.

Thanks to this month’s foodiepenpal who sent me some awesome spinach noodles! I combined those with some whole wheat noodles I had on hand. Not only was it pretty, but extra nutritious.

Bowl number one was a huge success. (In other words, its still in my pregnant belly!) I may have to go for two!

Have I mentioned how much I’m loving not counting calories these days!? Bring on the food!

What’s for Dinner: Holy Carbs!

So I don’t really know what I was thinking when I packed my dinner for work, but I guess the baby in my belly was craving some carbohydrates! Note to self: don’t prep food while hungry.

Tonight for dinner: Mexican Black Bean & Brown Rice Sweet Potato plus Guac!

Oh man is this tasty! And so easy to make you might not believe it only required a microwave.

Make it at home by throwing together a few simple ingredients you may already have in your pantry! You need a cup of instant brown rice, a cup of rinsed canned black beans, and some pre-made salsa – microwave for two minutes or just eat it cold. Then add a microwaved sweet potato and some pre-made guacamole. That’s it! Yummy in my tummy!

Snack of the Day: Vanilla Chi Pumpkin Smoothie

Today’s snack is a vegan concoction I’ve come to love. Bare with me, it sounds crazy and looks disgusting, but it’s delish!

This Vanilla Chi Pumpkin Smoothie is made with 2 scoops of Vanilla Chi Flavored Vega Protein Powder (an awesome vegan multivitamin and protein supplement), half a can of pure pumpkin, 1 cup of water, 1 cup of light vanilla soymilk, ice, cinnamon, and a touch of agave.

Not only is it tasty, but it’s totally vegan and super healthy! 2 scoops of Vega clock in around 240 calories, and for a girl trying to stop losing weight, it certainly packs a punch!

What’s for dinner: Tupperware Tastiness

Tonight for dinner at work I’ve packed a flavorful tub of tastiness. Best part: no cooking necessary, well unless you count the two minute microwave!

This is my Black Bean Burger Pepper & Onion Brown Rice Bowl:

Here I’ve got a half a bag of frozen peppers and onions, two Morningstar black bean burgers, and a cup of instant brown rice.

Veggies? Check. Whole grains? Check. Lean Protein? Check!

All I’m missing is some guacamole for a healthy fat and some salsa for a little extra flavor. Next time I know exactly what to do to make this meal perfect!

My new obsession…

In light of recent news, I have a new obsession.

I am on a mission to eat vegetables every day at breakfast! I usually don’t have veggies in the morning, probably out of taste and convince – but waking up an extra 15 minutes early to cook some veg is more than worth it!  I tend to go for oatmeal and fruit, which is fantastic, but I want to up my green food intake. I plan on having my normal oatmeal smoothies every morning too, because well, Yum! Plus, it’s time to stop losing weight and actually look forward to gaining!

This morning for breakfast, I sauteed some zucchini, spinach, and fresh green pepper (from my own garden) in a skillet with a touch of coconut oil.

Then I added one whole organic egg and 2 egg whites. Yep, I eat eggs. This is where the “mostly vegan” thing comes into play when I talk about my diet, but that’s a whole other post! Sorry to disappoint all you die hard vegan folk, but I love the yolk!

I totally believe that breakfast is the most important meal of the day. Here’s a tip: be conscious of your choices every morning. Think about getting a complex carbohydrate and some protein into your body to get your metabolism moving for the day. Don’t be afraid to eat more in the mornings and less at night, you need to fuel!
